Fresh Watermelon Feta Bites in Lettuce Cups – Elegant, Easy & Ready in Minutes

Light, fresh, and ready in minutes, these watermelon and feta lettuce cups with mint and olives are the perfect summer appetizer – inspired by Greek flavors.

A tribute to Greece and the fertile bounty of the Mediterranean.

 

 

Ingredients (Serves 4):

• 2 large slices of watermelon 🍉

• 100g feta cheese 🧀

• 8 fresh lettuce leaves

• A handful of pitted black olives

• A few fresh mint leaves 🌿

• Extra virgin olive oil

• Balsamic glaze

• Salt and pepper to taste

 

Instructions:

 

Cut the watermelon into cubes and place them in a bowl.

Add the feta, chopped into cubes, the olives halved, and the finely chopped mint leaves.

Drizzle with olive oil, season with salt and pepper. Let the flavors meld in the fridge for 5-10 minutes.

Arrange the lettuce leaves on a flat plate as a base.

Spoon a portion of the salad onto each leaf, creating little “baskets.”

Drizzle with balsamic glaze for a final touch of elegance.
