📝 Ingredients (Serves 4):
320g (11 oz) mezze penne or penne rigate
1 medium onion (white or yellow), chopped
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1–2 tsp capers (in salt or vinegar, rinsed well)
3–4 tbsp extra virgin olive oil
Salt, to taste
Freshly ground black pepper, to taste
3 tbsp sugar (heaping)
½ cup (about 60 ml) white wine vinegar
150–180 g (about 6 oz) cream cheese (like Philadelphia)

1. In a large pan, sauté the onion and sliced bell peppers in olive oil over medium heat. Add salt and pepper.
2. Once the peppers are soft, stir in the sugar and vinegar. Let simmer 2–3 minutes to reduce slightly.
3. Lower the heat, then stir in the cream cheese and capers. Mix until the sauce becomes creamy and smooth.
4. Meanwhile, cook the penne until just al dente. Drain and toss directly into the sauce.
5. Mix well and serve hot, garnished with fresh strips of bell pepper or your favorite topping.
